Q:
Napisz przykładowe zdania z have a .
A:
"Have a + (Verb)" (have a try/ look / taste ) you are suggesting something to someone. But this "phrase" is limited so you can't just add any random word with this pattern, like your phrase "have a listen" because it does not make sense. You might say "try listening to-" but that might change the whole meaning, so you can simply just say "Hey, listen to this (song),(voice message)," when you want someone to listen to something for the first time.
Whereas "have a + (noun)" is basically just receiving the object. (Have a cup of coffee before studying = Drink a cup of coffee) or explaining a current state. ↓↓
Have a headache.
Have a stomach ache from eating too much.
Have a problem with my next door neighbor.
You're just going to have to memorize the patterns.

Q:
Czy to brzmi naturalnie? I'll have this and this, one of each please.
A:
× I'll have this and this, one of each please.
✓ I'll have this one and this one. One of each please.
Your original sentence could be fine too.
This = これ
That = それ/あれ
So it somewhat depends on where the objects are for using this or that. If I were pointing to a menu I’m holding, I’d probably say “this one and this one.” If it were a chocolate shop and I’m pointing to something in the case near me, I’d say either “this one and this one” or “this one and that one”. If they’re behind the counter far away, I’d say “that one and that one”.

Q:
Have her hair dye gray.I think for this question, the verb after (make, have , had, has, help , let) should put original verbs. (A) is correct answer right? Dye.
A:
You're correct, but that isn't true for this sentence. In this sentence, because you're describing what will happen to the hair rather than what the hair itself is going to do, the correct form is have + noun + past participle, in this case "dyed", so the correct answer is D.
If you said "she intends to have her hair dye grey", it sounds like you're talking about "hair dye" as a compound noun being "grey", rather than the result of her dyeing her hair being that it becomes grey.
If you said "she intends to have her hairdresser ___", where the gap is filled by what the hairdresser is DOING and not what is being done to the hairdresser, then you would be correct and it should be the plain form of the verb, and the correct sentence would be "she intends to have her hairdresser DYE her hair grey".
