Most adjectives can take both “for” and “that.” The difference is that “for” is used with an object followed by an infinitive (me to beat) and “that” is used with a subject and a conjugated verb (he criticized). I think the reason “true” doesn’t work with an infinitive (and therefore with “for”) is because you need a whole statement to deem true or untrue. It doesn’t make sense if I say, “To run is true.” How would you interpret that sentence? How can running as a concept be true or untrue? But I can say “It is true that I run.” The statement “I run” can be true or false. The concept of running cannot be true or false. However, the concept of running can be (im)possible, enjoyable, difficult, ridiculous, etc: “To run is impossible. One must walk.” “To run is ridiculous. Better to bike.” “To run is enjoyable. More people should try it.” Etc.
To sum up, a verb on its own (as an infinitive) can be described in many ways, and if you can describe a verb with an adjective, then you can also use “for + object + infinitive” with that adjective. If you can’t describe the verb on its own with an adjective (like “true”), then you must describe a whole statement, which requires you to conjugate the verb, which requires you to use “that” instead of “for.” I hope that makes sense and doesn’t make things more confusing.
