Use “until.” You won’t have the item in stock “until” next week. Something can’t or won’t happen until a specific point in time. Something must happen before something else can happen.

Example-She won’t register for classes until she has met with the counselor. I can’t watch my tv show until it airs next week.

“By” means something should or will happen no later than a specific point or moment in time. You can say that the shipment will come in “by” the following week.

To clarify, if the item won’t come in next week then use the word “by.” If the item will come in next week use the word “until.”
