You use 'his' because he is a male. We know this as you start his name with 'Mr.'.
He/his/him - masculine (boy)
She/her - feminine (girl)
It's a bit unnatural to say 'likes a coffee strong'.
It would be a bit more natural to say 'likes a strong coffee'.

"His" "My" "Her" etc is used for emphasizing personal preference (個人的な好み).
However, you don't really need "the." べつに、「The」はいりません。
"I like coffee strong" is okay too.
Also, we really don't say "a coffee" unless you are ordering at a cafe.
