Both are correct. I think most often we would hear and say, in general terms, answering the question “What are atheists?” “Atheists don’t believe in God.” But if you were answering the question, “What is an atheist?” You would say “An atheist doesn’t believe in God.” I’m not sure if that helps, but I’m sure others will have good input on this question.

Tricky. Subtle difference.
The first one sounds like a definition.
The second is more like an unprompted statement.
Both serve about the same purpose in meaning.

Here is one more question about the difference between those sentences.

When I want to talk about things in general, would it be always plural?
Or if I say “an atheist doesn’t believe in God”, do you think I’m taking about an atheist in general?
