Well, that's actually a very good question.
Moi is used, when you could replace it with ci, so in english it would be "these", like in these friends --> ci przyjaciele --> moi przyjaciele;
Moje is used when it could be replaced by te, which, confusingly, also means "these". So you would need to say "Moje psy", because of "Te psy".
Because only "ci" could be used before "rodzice", you would need to use Moi.
I know, that it's a lot of grammar,and I'm sorry for that, but I think the best way to get used to it is to just read and listen and practice, because it's a thing of getting used to it

These two words are not interchangeable. They do have the same meaning ("my") indeed but are applied depending on the grammatical gender of the noun.
To get this, you have to immerse into the genders in singular and plural. A basic description can be found in Wikipedia (https://en.wikipedia.org/wiki/Polish_grammar#Ge...), so I won't go too deep into details.
Answering your question - you have to use "moi" here because "rodzice" is the masculine personal gender (rodzaj męskoosobowy). If it was the non-masculine personal gender (rodzaj niemęskoosobowy), "moje" would be used.
Further examples:
- twoi koledzy, nasi ludzie, moi znajomi - all these nouns are masculine personal
- twoje koleżanki, nasze dzieci, moje znajome - all these nouns are non-masculine personal.

There is not only the word "jest". There is "jest wdzięczne" and then should follow the dative of "on" - "mu" or "jemu".
