It's a matter of gender that the noun is. Kawa is a feminine noun, which requires to use "tamtą" while zwierzę is a neuter gender, which requires "tamto".

Some other examples:

Tamtą lalkę, tamtą stronę, tamtą dziewczynkę

Tamto miejsce, tamto jajko, tamto krzesło

@agansy you use “tamtą” when you want to use „dopełniacz”, which is a case in which you answer the question “which” (for example:
- którą chcesz kawę? (Which coffee do you want?)
- tamtą kawę (that coffee))
You use it only when the noun is feminine. For masculine noun you would use “tamten” or “tamtego” (depends on the case)

Tamto is for the gender neutral noun which more or less means “that”
For example “tamto zwierzę” means just „that animal”. If you’d like the same word for feminine noun you should say “tamta”

@agansy demonstrative pronouns will change with the noun, depending on the case you are currently using (for example tamta, tamtej, tamtą - they are all correct in different cases and they have to correspond to the noun that comes afterwards)
