In casual narrative speech, "you" is often used to identify with listener. By using "you" instead of just "I", the speaker is implying that they have a shared experience or understanding with the listener.
Whenever he says "I", he is referring to his own personal experiences. Whenever he says "you", he is trying to elicit some sort of understanding from the listener.
Extra note: Whenever he says "you know", he is trying to further reinforce that mutual sense of understanding. It is kind of like a strong ね in Japanese.

Thank you... I did study linguistics in college, but really, most of what I know comes from analyses I did in high school English and while studying Japanese, as well as from discussions with the English teacher that I assist... I'm glad that you understand my explanations, though! I worry that I sometimes get too excited and accidentally use more complex vocabulary than I should.. ^_^;;;
