you shouldn't start a sentence with 'zaś'. It's usually used for comparison and means 'whereas', 'while'. Examples:
1) 'On lubi gotować, ja zaś wolę jeść' (he likes cooking while i prefer eating)
2) 'Kobiety poszły na prawo, mężczyźni zaś na lewo. (women went right, whereas men went left)
It can also emphasise the last word of the previous part of the sentence. For example:
3) 'lubi wszystkie owoce, najbardziej zaś jabłka' (he likes all types of fruit, especially apples) in this case 'zaś' refers to 'owoce'
Formerly it has a form of 'za się' but got shorten and that would be another meaning of it. 'zrobić coś na zaś' (do sth in advance, just in case). I think these are the most common usages of word 'zaś' actually i think it's not really common in spoken language. it's more formal and more often used in written and formal language
